In a musical score, tempo rubato invites musicians into expressive freedom as they play. In Italian, tempo rubato literally means “stolen time.” We invite you to steal away this December for a bit of Spillian- style R&R Spillian style…a little Respite and Revelry…and find a little freedom.

The Dinner: A Reveler’s Rubato Feast

Make an evening of it! Cocktails and dinner at Spillian’s grand table on Saturday evening, with a chance to be a taste-tester for some new retail food offerings we’re developing. And, of course, a resplendent dinner from Chef Christian. Linger afterwards and enjoy the fire. And perhaps play a holiday tune or two on our antique Steinway…

  • 5 PM Saturday: Cocktail Hour. Actually hour and a half, but who’s counting? Featuring a special Spillian holiday cocktail and official taste-testing of new Spillian products.
  • 6:30 PM Saturday: Feasting and Frolicking. A prix fixe dinner to delight both veggie and meat lovers. Here’s the menu, a wonderful fresh take on holiday eats:

Christmas Tamales
for our meat lovers
short rib and plantain duck fat tamales topped with blueberry mole and charred scallions;
served with a charred eloté corn salad

for our veggie lovers
tamales two ways: sweet potato and pinto bean; fire roasted green chili and vegan mozzarella, served with pico de gallo; served with a vegan charred eloté corn salad

Meat Lovers Entrée
pan seared skirt steak with sesame chimicurri; Geno’s baguette crosanti grilled with citrus butter & meyer lemon gremolata; grilled wasabi potatoes; leek soubis; roasted pepper, tomato and zucchini trio

Vegan Entrée
spicy sabzi cauliflower with cashews; roasted sweet potato; charred citrus-marinated fennel; pickled carrots and picked shiitake mushrooms over leek risotto; with sesame lime ponzu sauce

Dessert
pumpkin ginger cheese cake, topped with dulce de leche and a pear crisp
or for our vegans, tiramisu with a pear crisp and raspberry pearls

tea | coffee | lemonade | iced tea | cucumber water

 

PRICE: $75 per person
Includes tasting and dinner. Cash bar, tax and gratuities extra.
Dinner seating is limited and advance registration is required.


The Full Rubato: An Overnight at Spillian for Two

Steal away for a mini-escape! Take advantage of our special early check-in and spend the day as you wish – staring into the fire, tackling a jigsaw puzzle, wandering the woods, checking out small town holiday festivities, or simply taking a nap. Then gather with fellow revelers for cocktails and feast. Stay overnight in one of our eight enchanted bedrooms, and grab a quick breakfast in the morning as you head off into Sunday’s adventures.

  • 10 AM Saturday: Check In. You’re welcome any time after 10 AM. We’ll have coffee, tea, and lemonade on hand. Ask us for directions to one of the great lunch spots in Fleischmanns!
  • 5 PM Saturday: Cocktail Hour. Wander down to the tavern to have a drink and meet your fellow revelers for the evening. And opine on new food product ideas we’re creating.
  • 6:30 PM Saturday: Feasting and Frolicking.
  • Your Call Saturday: Bedtime. Sugarplum visions or ghosts from holidays past, if you so conjure them. Or dreamless sleep in the quiet of a Catskills December night.
  • 9 AM Sunday: A Quick Breakfast Nosh. With fresh coffee, tea, juice, fruit and our house-made apple turnovers.
  • 11 AM Sunday: Check out and journey into your Sunday.

PRICE: $325 per couple
Includes double occupancy overnight room rental; and tasting, dinner, and light breakfast for two. Cash bar, tax and gratuities extra.
